Is there a how to guide anywhere?

I had a quick go last time I had a wheel off, but wasnt sure if the centre comes off (the drums have been painted, so i can tell if its a removable dust cap or part of the drum) and I was sure if it was just a case of taping with a dead-blow till it breaks free, or if theres more to it than that?
It didnt seem to budge much with a few taps, but i wasnt giving it too much welly in case I was doing it wrong!

It is take wheel off having chocked the other wheels so the hand brake is off then pull drum off the hub I would guess like anything with a fair amount of mileage the drum will be lipped so a few levers and force it off then grind off the lip before refitting the last one I did at home I just used an angle grinder and kept off the main braking face.

yes I suspected they might be considerably lipped. so is the centre cap part of the drum itself then?

Slacken off handbrake cable in the centre console between the seats.

Drums have 2 x threaded hole in the front... send bolts in there and it pushes the drum off.
